That was for the beta version which was released before the first stable version. After then, we started to roll out stable versions only and stopped with betas.
You can use your own splash screen if you purchase a copy of Gideros Studio - which will make us more than happy, and support with our development ;-)
I haven't exported anything to ios yet - but I'm assuming the use of Default.png still works to display an initial screen when loading, yes?

android does not have anything like default.png so no we cant do like that unless we will treat our first scene as a spash scene or something similar logic
I think the OP was wondering which parts of the exported project deal with the gideros splash screen so he know's which code to change.
