I believe it shouldn't be a problem building for then Kindle Fire, but building

Supporting Kindle Fire shouldn't be a problem - building for an Android tablet and choosing the resolution using the player settings would suffice. Let us know, if you can do that.
I had a look at Color Nook. It has it's own SDK as a plugin to Android SDK, and there might be some prerequisities for building for Nook. Unfortunately we do not have a Nook with us, so cannot try it out.
